I have a new favorite way how to have wine and cheese.
The latest obsession is beetroot pesto I make from roasted beets and serve on bread with goat cheese.
It's worth trying out even only because of the beautiful color of beets!
You'll find a recipe for pesto from Dishing Up The Dirt . I made some changes and also added roasted pumpkin seeds and sun-dried tomatoes.
